Japanese Shrimp Ramen Noodle Soup

Shrimp Ramen Noodle Soup is a delectable fusion of savory flavors and comforting textures. This dish features tender shrimp simmered in a rich, umami-packed broth, accompanied by springy ramen noodles. Infused with aromatic ingredients like garlic, ginger, and scallions, the soup is often garnished with fresh vegetables, a soft-boiled egg, and a sprinkle of sesame seeds. The result is a satisfying and flavorful bowl that balances spicy, salty, and sweet notes, making it a perfect choice for a quick yet indulgent meal.
Ingredients:

  • 2 packs of instant ramen noodles (discard the seasoning packets)
  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 cups (1 liter) chicken or vegetable broth
  • 2 cups water
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste (optional)
  • 1 tablespoon sesame oil
  • 1 cup mushrooms, sliced (shiitake or cremini)
  • 1 cup baby spinach or bok choy
  • 2 green onions, sliced
  • 1 tablespoon vegetable oil
  • 2 large eggs (optional)• 1/2 cup corn kernels (optional)
  • 1/2 cup bean sprouts (optional)
  • 1 teaspoon sesame seeds (for garnish)
  • Nori sheets (seaweed) for garnish (optional)
  • Fresh cilantro or basil (for garnish, optional)
    Instructions:
  1. Prepare the Broth:
    o In a large pot, heat the vegetable oil over medium heat.
    o Add the minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
    o Pour in the chicken or vegetable broth and water. Stir well.
    o Add soy sauce and miso paste (if using). Stir until miso paste is dissolved.
  2. Cook the Shrimp:
    o In a separate pan, heat the sesame oil over medium-high heat.
    o Add the shrimp and cook for 2-3 minutes on each side, until pink and opaque. Remove from heat and set aside.
  3. Cook the Noodles:
    o Bring the broth to a boil, then reduce the heat to a simmer.
    o Add the mushrooms and cook for about 3-4 minutes until tender.
    o Add the ramen noodles and cook according to package instructions, usually about 3 minutes.4. Add Vegetables:
    o In the last minute of cooking, add the baby spinach or bok choy and corn kernels (if using) to the pot.
  4. Cook the Eggs (Optional):
    o If adding eggs, bring a small pot of water to a boil. Carefully add the eggs and cook for 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled. Remove eggs, cool in ice water, then peel and halve.
  5. Assemble the Soup:
    o Divide the cooked noodles among bowls.
    o Ladle the hot broth, mushrooms, and vegetables over the noodles.
    o Top each bowl with cooked shrimp.
  6. Garnish and Serve:
    o Garnish with green onions, sesame seeds, nori sheets, and fresh cilantro or basil if desired.
    o Serve hot and enjoy!
