• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 6 tablespoons cold unsalted butter, cubed
• 3/4 cup cold buttermilk
For the Gravy:
• 1 pound breakfast sausage (mild or spicy)
• 1/4 cup all-purpose flour
• 2 cups whole milk
• Salt and pepper to taste
• Optional: a pinch of crushed red pepper flakes for extra heat
Instructions
Step 1: Preheat the Oven

1. Preheat your oven to 450°F (230°C).
2. Line a baking sheet with parchment paper.
Step 2: Prepare the Biscuits
1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
2. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
3. Make a well in the center of the flour mixture and pour in the cold buttermilk.
4. Stir until just combined. The dough will be slightly sticky.
5. Turn the dough onto a lightly floured surface and gently knead it 4-5 times until it comes together.
6. Pat the dough into a rectangle about 1 inch thick. Fold the dough over itself a few times to create layers.
7. Roll or pat the dough to a thickness of about 3/4 inch. Use a round biscuit cutter to cut out biscuits.
8. Place the biscuits on the prepared baking sheet, making sure they’re close together for soft edges or spaced apart for crispier edges.
9. Bake for 10-12 minutes or until the tops are golden brown.
Step 3: Cook the Sausage
1. While the biscuits are baking, cook the breakfast sausage in a large skillet over medium heat.2. Break up the sausage into small crumbles as it cooks. Continue cooking until the sausage is browned and cooked through.
Step 4: Make the Gravy
1. Once the sausage is fully cooked, reduce the heat to low. Sprinkle the flour over the sausage and stir to coat the sausage evenly.
2. Continue cooking for 2-3 minutes, stirring frequently, to cook off the raw flour taste.
3. Gradually add the milk to the sausage mixture, stirring constantly to prevent lumps.
4. Increase the heat to medium and continue cooking, stirring frequently, until the gravy thickens to your desired consistency.
5. Season the gravy with salt and pepper to taste. If you like a bit of heat, add a pinch of crushed red pepper flakes.
Step 5: Serve
1. Split the warm biscuits in half and place them on plates.
2. Spoon the sausage gravy generously over the biscuit halves.
3. Serve immediately and enjoy! This recipe offers a classic and comforting Southern dish perfect for breakfast or brunch!
