British Isles Shepherd’s Pie

Homemade British Isles Shepherd’s Pie is a comforting, traditional dish featuring a savory blend of ground lamb or beef, cooked with onions, carrots, and peas in a rich gravy. Topped with a creamy layer of buttery mashed potatoes, it’s baked until the top is golden and slightly crisp. This classic pie brings together hearty ingredients in a warm, satisfying way, embodying the essence of British home-cooked meals with every bite.
Ingredients:
For the meat filling:

  • 1 lb (450g) ground lamb (or beef for Cottage Pie)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup beef or lamb stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
    For the mashed potatoes:
  • 2 lbs (900g) potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup milk
  • Salt and pepper to taste
    Instructions:
  1. Prepare the Mashed Potatoes:
    o In a large pot, bring potatoes to a boil in salted water.
    Reduce heat and simmer until tender, about 15 minutes.
    o Drain and return potatoes to the pot. Mash with butter, milk,
    salt, and pepper until smooth and creamy. Set aside.
  2. Cook the Meat Filling:
    o Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
    o Add minced garlic and cook for another minute.
    o Add the ground lamb and cook until browned, breaking it up with a spoon as it cooks.
    o Stir in diced carrots, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 2 minutes.
    o Pour in the beef or lamb stock and bring to a simmer. Cook for 10 minutes, until the mixture thickens slightly.
    o Stir in the frozen peas and cook for another 5 minutes. Remove from heat.
  3. Assemble the Shepherd’s Pie:
    o Preheat your oven to 400°F (200°C).
    o Spread the meat filling evenly in a baking dish.
    o Spoon the mashed potatoes over the meat, spreading them
    out with a spatula. Use a fork to create a pattern on the top
    of the potatoes for a bit of texture.
  4. Bake:
    o Place the dish in the oven and bake for 20-25 minutes, or
    until the top is golden and the filling is bubbling.
  5. Serve:
    o Let the Shepherd’s Pie cool for a few minutes before serving.
    Enjoy with a side of green vegetables or a simple salad.
